Happy as a Clam ….Packet May 18, 2020
Steamed clams with garlic, butter, white wine, and scallions has to be one of my most favorite dishes. It’s so light and incredibly flavorful and especially delicious served with a few pieces of warm crusty bread and a chilled glass of wine. What’s nice about this recipe is that you can serve your steamed clams alone in their broth or on top of a bowl of pasta for a heartier meal. There are many recipes for steamed clams, but what makes this recipe different is that you steam the clams in foil packets on the bbq. First you want to wash your clams. Simply run the clams under some tap water and give them a scrub to get rid of the extra sand, otherwise the sand can land up in your broth.
Each clam packet should have roughly enough clams for one serving (about 10 clams) if you put too many clams in the foil packet at once, the packets will be too heavy and leak.
Get two pieces of aluminum foil roughly 12″ x 24″ and place them flat on the counter. One piece overlapping the other. You want to have enough room on all sides of your clams to wrap the foil around the clams and the other ingredients without anything leaking out of the sides.
Add the clams to the center of your aluminum foil. Then top your clams with the butter, garlic, scallions and white wine.
Wrap up your clams into foil packets so that they are tightly closed at the top and all the sides are closed up. Place your clam packets on the grill for 20 minutes.
Remove your clam packets from the grill and open the top carefully. They will be very hot inside as they have been steaming. The clams should have steamed completely open and the broth will be on the bottom of the packets. If the clams are still closed or only open slightly, place the clam packets back on the bbq for a few more minutes.
Place your steamed clams and broth in a bowl as is, or on top of a bowl of pasta. You can add salt, pepper, a squeeze of lemon, parsley, and red pepper flakes if you desire.
Recipe (for one serving)
10 clams
3 tablespoons butter
6 cloves of garlic chopped
6 scallions or green onions chopped into small pieces.
1 1/2 cups of white wine
2 pieces of aluminum foil (12” x 24”)
